Cottage Cheese Pancakes
6 eggs, separated
2 cups cottage cheese
2/3 cup flour
2 Tbsp sugar
1 tsp salt
dash of cinnamon
butter or coconut oil for frying
Mix egg yolks, cottage cheese, flour, sugar, salt and cinnamon. In another bowl, beat egg whites until stiff. Fold into the cottage cheese mixture. Fry in a little butter or coconut oil until puffy and golden.
